Wine Profile
Tasting Notes
The 2010 Sparkling Rosé is made using 80% Pinot Noir fruit and 20% Chardonnay from the well known Bald Mountain Vineyard. The winemaking is identical to the approach used in Champagne, France, and is considered “Brut Nature” (no dosage). The Pinot Noir fruit used was sourced entirely from the 2010 vintage, lightly pressed with minimal skin contact. The lightly colored juice was fermented dry, spent a brief time in neutral oak, then was bottled in April 2011. The wine then went through a second fermentation in bottle, then the wine spent about 11 years aging on its lees before being disgorged in April 2022 with zero grams of sugar added, lending the nomenclature “Brut Nature” to the label. The wine has a pale rose-gold color with intense bubbles throughout. The nose is generous with intense fruit, reminiscent of red currants, strawberry, white peach skin, wild flowers, rose petal candy, crushed chalk and a hint of spice. The palate is dense, powerful and opulent yielding ripe flavors of wild berries, pink peppercorns, wet flowers with an incredibly fine minerality. This Rosé was recently disgorged and is just about perfect now, but will still age well for the next 3-5+ years if kept well. Ideally serve this Champagne at just below cellar temp at roughly 50 degrees in an all purpose white wine stem, unless you have large Champagne stems (not tall and thin please!) which leave room for the champagne to breathe.
Vineyard Notes
Bald Mountain Vineyard, located in Bonny Doon, is owned and farmed by Jim Beauregard. Planted in 1990, the 40 acre vineyard sits at an elevation of 920 to 1050 feet on a southwest facing slope. Monterey Bay marine influences combine with the rare white sandy Zayante soil to produces wines with minerality and striking acidity. Plantings: 33 acres Chardonnay Clone 4.

Love this Brut Rose! It’s very crisp, light, and not too sweet. It’s hard to save it for special occasions because it’s my drink of choice!
